if i'm going to spain, i'm going to need a blog

hi all,

welcome to my very first blog post ever.  i'm so excited!  the reason i started this blog is so we can share information about our upcoming spanish adventure.  i'm so excited!!  as my plans solidify over the next few months, i hope to be sharing travel and scheduling information.  however, for now - let me start this whole process properly by sharing one of my favourite spanish recipes - catalan eggplant.  it is simple and so very delicious!
